- It's 250 gm of Aarbi.
- You need 250 gm of Brinjal.
- It's 2 of medium size onion.
- It's 2 of medium size tomatoes.
- Prepare 1 inch of Ginger.
- It's 2 of Green Chilli.
- You need 1/2 tsp of Zeera.
- Prepare Pinch of Hing.
- You need 1/2 tsp of Salt.
- Prepare 1/2 tsp of Turmeric powder.
- Prepare 1/2 tsp of kashmiri lal mirch powder.
- It's 1/2 tsp of Coriander powder.
- You need 1/2 tsp of garam masalla powder.
- It's 1 pinch of Ajwain.
- Prepare as needed of coriander to garnish.

- 1.Take aarbi and scrap lightly to remove the skin,cut them into large pieces, then take a pan,add oil and heat it,add aarbi in a pan and deep fry aarbi in medium flame..Then take baingan,cut into large pieces then add in a pan and deep fry....
- 2. Take tomatoes,cut them into pieces, add them into jar with green chillies ginger to make a thick paste....
- 3. Take a pan,add chopped onions with hing zeera tadka,stir it till onions gets golden pink,then add tomatoes ginger paste into it,stir them well, till oil gets separated...
- 4. Then add half teaspoon salt, half teaspoon haldi,half teaspoon kashmiri lal mirch, half teaspoon dhaniya powder,half teaspoon garam masalla and one pinch ajjwain,roast them well.....
- 5. Then add 150 ML water and add deep fried aarbi and baingan into it...
- 6. Cook them well on a medium flame for 10 mins...
- 7. Then it's ready to serve,add coriander to garnish...
