- Soak your rice overnight.Wash and strain it to remove all the excess water.
- When all the water has been strained.put in a blender with the sugar and the 1 cup of heavy milk.Blend making sure to scrap the sides.Blend with pauses..
- Once satisfied and the rice has been finely ground,Add the 2 eggs,cardamon powder,flour and yeast and thin coconut milk.Don't add the thin milk all at once as you might need less.The mixture shouldn't be too watery it should be slightly thick.Blend everything together until everything is well combined..
- Once satisfied,pour into a bowl and cover with cling film.Let it rise to double its size.it might take about 30 minutes to an hour depending on where you live..
- When ready,mix it together and use a non stick pan to cook.Drizzle a little bit of oil on the pan.scoop some batter and pour it in.The batter should not be watery.It should be of a thick kind of consistency..
- Pour in the pan and cover the pan with a lid.cook in very low heat to ensure it is thoroughly cooked.You will know it's ready to be flipped when bubbles start to form on top.
- Once the bubbles have formed,drizzle a bit of oil on the bubbles then gently flip it on the other side to cook too.The colour should be brown on both sides.once satisfied,remove and cook the rest u til you finish.you will make around 20 vibibis according to your size.Don't use a large pan.The small ones are good for perfect vibibis..
